Banana Souffle

I thought we were out of eggs so I bought more. Sean thought we were out of eggs so HE bought more. We were not out of eggs. We then had 18 eggs for 2.5 people none of whom eats a lot of eggs. This was my effort to fix this. Besides the butter for greasing the pan it is practically diet food…but it sure doesn't taste that way!


  • 4 egg whites
  • 2 overripe bananas
  • 3 tblsp confectioners sugar
  • 1 generous tblsp fresh lime juice
  • 1 generous tblsp vanilla extract
  • butter for greasing pan

Preheat the oven to 450. Take out the top rack of the oven, leave the bottom rack in.

Grease a medium size souffle pan

In one large bowl, beat together everything but the egg whites

In a spotlessly clean and dry bowl (preferably copper) with a spotlessly clean and dry mixer beat the egg whites until they form stiff peaks.

Slowly fold the egg whites into the banana mixture

Very gently transfer everything into the souffle pan

Very gently transfer the souffle pan into the oven.

Bake for 15 minutes.

Serve immediately if not sooner. Serves 4.

    BTW, you will probably not use the entire amount of meat.
